Recently I had been absolutely craving some chicken livers.
My guess is this was my bodies way of telling me that it was probably time to eat some to get all of the fat soluble vitamin and health benefits from them. Chicken hearts and livers would certainly go on my top list of superfoods because they have both great taste as well as are an amazingly healthy food.
All I had to do was go down to my local farmer’s market on a Saturday morning and I picked up two pounds. One to let thaw out and cook up and the other to keep on hand in the freezer. Another added benefit is that they are $3-4 per pound from a local free range source. They are really just asking to be eaten up!
Ingredients:
1-pound chicken hearts and livers (if you want just one or the other, go for it)
2-4 tablespoons of butter or coconut oil (or a bit more as they can be a little dry)
2 onions (I like purple best, but anything will do)
1-2 cloves of garlic
A few pinches of Celtic Sea Salt and grinds of black pepper to taste
Paprika to taste
Directions:
Melt butter in pan over medium heat
Slice onions and garlic and through in. Cook until soft
Add chicken hearts and livers
Add all other seasonings
The chicken livers usually cook pretty quickly, but if you are in a hurry or like to cook things very thoroughly then you can cover with a lid to help steam to help cook the hearts as they are very dense.
Now it is time to dig into this superfood and get all of the amazing vitamins and minerals that it packs.
I am glad I listened to my body on this craving. Organ meats are certainly something that can be consumed a few times a week to offset eating too much muscle meats as well as boost the nutrient profile and density of your foods. Try to be a little adventurous. Remember that you might only be holding on to another person’s bias towards food if this sounds a little strange to you. Let it go and be your own self. You might just find out that you like a new food and love your newfound self
